Inspired by the modern wave of New American cooking, the dinner-only restaurant features an a la carte menu of inventive, seasonally-driven dishes infused with global techniques and ingredients. Chef Hergatt will bring a fresh and unique approach to The Vestry, expanding upon the bold flavors and colorful dishes his culinary style has become synonymous with. Rooted in long-standing relationships with local producers and foragers, the menu is largely focused on seafood and vegetable dishes, with highlights that include Crispy Nori Tartlets with salmon tartar and spicy egg yolk; Grilled Maitake Mushrooms with surf clams and daikon sprouts; and Tile Fish with edamame, pickled daikon radish, and cilantro.
